A grandmaster can force stockfish to draw. No they cannot...
Stockfish is roughly rated 3600 elo and Magnus highest elo was around 2900. No human can beat stockfish. A grandmaster's best chance is to try and remember how another computer managed to draw the game but as the human you would have to remember perfectly because some of the moves a computer makes a human won't make as theybare completely illogical at face value as a human just doesn't have the same processing power as the servers stockfish uses.

I don't know where you got chess tournaments have set openings from cause they typically don't.
You can play whatever opening you want.
Only computer Vs computer tournaments have set openings cause as I said they play for a draw meaning both computers are playing not to lose and would play out the best opening which would end in a draw if not for human intervention.

Why would someone whose trying to last as long as possible play for a win?
If you start a chess match with an unknown opponent then why wouldn't you be play to win?
In a scenario where you did wanted to last as long as possible you would try and close the board but the opponent would be constantly trying to open up the board which will happen because the two players aren't the same level.

Yh there are only a handful of people who could make Magnus think hence why he obliterates anyone whose 1500.

Let say he does lasting a maximum of 37 that's assuming he manages to squeeze out that much by not making a mistake. He's 1500, he would have lost sooner.

I never said he was going to win, I said that the level 3 wasn't even enough so going to a lower level would lead to an instant loss.

Playing in a way to keep all your pieces defended is impossible because on the game of chess you are playing for a win and you'd be trying to open up the board. The computer can defend indefinitely because they'd both play for a draw, won't make any blunders and are likely using the same engine.
A human vs a computer wouldn't be able to play for a draw because the computer is so much better that they'd always play the top engine move whereas a human wouldn't.

27 turns is quick in terms of chess...
The opponent did get obliterated as Magnus used barely any time and was in control of the game completely. There was no point of time where Magnus was in trouble or had to really think.

If playing defensively it wouldn't take long at all due to the difference in skill level.
30 more moves? No way it would take that long from a 1500 elo against a Grandmaster. 
Magnus had a two piece advantage and had a better structure than his opponent.

Apologies with the miss of "if" but even so an extra 10 turns is not long.
A 37 turn game is a relatively short game of chess.

Hanging a piece is just a blunder. Defending a piece is not playing defensively, that's just the basics of chess.

Defensive play in chess just means you aren't pushing for an advantage. For someone who claims to play chess, you surely don't sound like someone who knows what they're talking about.

It's easy to defend all your pieces in the early game.
Well no sh**, when you start the game with everything defended and your opponent hasn't even started an attack.
It takes some real skill to hang a piece in the early game.

Obviously, they're also planning to take initiative in the early game and planning to get an advantage in the midgame.
If anyone is only thinking of the endgame while in the early/mid game then they'll probably lose it before they even get there.

And how can a resignation be a loss in time as well? It's one or the other, either you run out of time and lose or you resign before the time is up / get checkmated.

Chess isn't only about being up on pieces. Position is actually more important cause you could be up 2 pieces and still be in a losing position because the opponent might have more active pieces while all of yours are still restricted

Play chess at 1800 elo is straight lies. Play by keeping all your pieces are defended is literally impossible because of your opponent is also playing the game or are they just sitting there doing back and forth moves not attacking or progressing the game state?
To properly defend in chess you have to attack because offense is sometimes the best defence.

Anyway even if we use your example of chess.
In your case you are the stronger player playing defensively, not a novice. A novice wouldn't be able to defend against a grandmaster cause a grandmaster wouldn't make a blunder a novice would be able to take advantage of.
The much weaker person always loses and gets obliterated very quickly.

As for your comparison to chess, it's so dumb. A novice playing defensively still gets cooked by a grandmaster because attacking is a major factor in the game. 
Tell me you've never played chess before without telling me you've played chess.

I'm underestimating defence? No I'm not, defending is way harder than attacking especially if you are weaker than your opponent.

Using a lower level promote makes the MC weaker.
If 3 is almost on par with the opponent then 2 would be weaker than them.

The opponent wasn't even stalling... That doesn't even make sense cause the blonde guy was stalling Reidruun.
Why would you stall when you already know you are on a time limit?
The only reason why the MC wasn't obliterated immediately is because he used promote level 3 from the very beginning

The very fact promote level 3 still couldn't beat his opponent proves that promote level 1 or 2 would have been a complete waste of time resulting in his death.

Also you wouldn't even know if you had to stall for 10 seconds or 10 minutes. You weren't even sure until the very next chapter got released. 

Running in circles for 10 seconds? Just ignore him and complete the mission which was to kill the priestess. MC survives cause he ran away but he failed saving the priestess which was his goal
