Semi-scrambled egg with soy on rice is such a winner combo. Especially if the egg is slightly undercooked and fried in a moderate amount of oil... so the still runny yolk will mix with the oil and color the rice slightly. 🤤 🤤 🤤
I like to heat the pan and oil until very hot befoe dropping the eggs into the pan... so the whites have some time to cook and leave the yolk still soft. Then once the whites turn opaque, I will kinda scramble/fluff it in the pan to make semi-scrambled eggs that have both white and yellow parts in it instead of a solid pale yellow.
