Knight bro falls in love with her because of his curse, or rather she is unaffected by his curse. His left eye is cursed with the Devil Eye which makes anybody who locks eyes with him develop intense feelings of hatred. Because she technically isn't really looking at him because her eyes are false she's unaffected by the curse but Knight bro interprets this as the power of love overcoming the cursed feelings of hatred.
