If you actually read Mangas, you would know. Besides, the series is already over 280 chapters. Is that not enough for isagi to evolve? 200 chapters are not few. Blue lock is all about being number 1 striker. The players teamed up too cuz soccer is a team sports. Everyone has their own egos and will try to surpass others.
