Couldnt he substitute others eating monsters and prevent them from turning crazy/dying etc?

He could in theory do so, however remember the dark mama particles you get from eating monsters? That directly affects ones body/mana, it's permanently integrated, only reason mc doesn't get affected is because of his passive
Think of substitute as an active, he can't keep doing it forever, and it's very inefficient in the sense of granting his allies with monster powers if he has to touch them at all times
