Once he regains all of his memories, he's still completely in love with her, but now he actually fully *understands* what that means. He's now good with words and knows how to be a proper prince, but his main priority is still Diarin. He's very clear and consistent about this to her, so she pretty much has no choice but to acknowledge his feelings and consider her own.
At that point, the issue is that he's a prince and she's a common priest (and even if she quit the priesthood, her status wouldn't be high enough to be with a prince, under normal circumstances). Well, it's an issue for her, at least, since, like I said, she's very pragmatic. Ceres, however, has pretty much zero concern for their status difference. He's basically like, I don't need to be crown prince, but if I am, then that means I have power, which means I can be with Diarin and give her whatever she wants, societal hierarchy be damned.
