As an FYI, if you use a charcoal grill, you sometimes have to tap the grill bars with the back of your knuckle to make sure it preheated properly; sometimes the center will get hot but the outside will still stay warm (a single tap and you can tell if the bar is hot or not and NEVER use your finger tips you masocistic bast****!). Propane grills, you can measure the temperature automatically because the temperature is spread evenly.
