I guess those must be some kind of special plant not too much like carrots. In the real world, giving horses that many carrots could risk them getting sick; horses are primarily grain and grass eaters, with domestic horses eating a lot of grain because of their energy requirements helping silly humans.

As for what that horse did to Chris -my dad compared horses to oversized toddlers who hadn't been toilet trained. So nomming and pulling someone's hair is par for the course, but should get a stern no from a groom or trainer.
