She is a girl. She only dressed as boy to hide from temple or/and something else.
Idk if Helmut here know she is a girl or not but i think he would figure it out soon if not know now

Well i do have some theories 
1-he already knew but since some adeption don't show all the inner talk (like promised Neverland manga we now what they think in anime they don't show it)

2-they decide to change it a little to make readers not so knowledgeable about future events

3- it's just show other way around like a parallel au from the novel which he didn't it's her until later in the event ( at that time he didn't know which to put in novel should i make him know or not then decided to stick knowing there and in manhua not knowing )

4- maybe auther thought not knowing would be more likable and would add some thrill to manhua so change some things here and there and may add additional chapters to it

@Zahb senaa I think option 2 is more plausible. I mean, if I were writing a story, I would do the same.

I personally think he knows, but is just going with the flow. 
Kinda like he did with his master's grandson
