Yes, none of us believe he's her actual father.
I get that she is able to assume since her maid is trying to get a spy hired that she is probably a spy too but how is she able to use that information to determine the tests were rigged? I don't see how the evidence connects.

Because the tests were conducted with her own DNA, her nails. She's trying to perform a DNA test with that man. The maid took her DNA and give it to the bad guy. The bad guy somehow was able to pass her DNA to the old man, and finally, she was performing a DNA test with two samples of her own DNA.
Btw, I ask forgiveness for my poor English... It's not my first language, so...
I think it would be more likely and easier for the maid to swap the samples since she was there for every step of the process (rather than getting the DNA to the fake father). Either way, my question is how she was able to draw the conclusion that the test was tampered with from the fact that she's trying to get a spy hired.
